2 carrots (diced)
1 stick Celery (diced)
1 onion (diced)
2 cloves garlic cloves (crushed)
1 tsp chopped thyme
16 ozs ground Beef
14 ozs canned Tomatoes
1.333 cups Beef stock
1 Tbsp Red wine vinegar
1 pinch sugar
salt
freshly ground Black pepper
16 ozs Penne
To garnish
4 Tbsps shaved Parmesan
thyme

Preparation steps

1.
Heat the olive oil in a large pan. Add the carrots, celery and onions and cook gently without browning for 5 minutes, stirring.
2.
Stir in the garlic and thyme and continue cooking for 1 minute. Add the beef and cook until browned.
3.
Add the tomatoes and their juice, the stock, vinegar and sugar. Bring to a simmer and cook for 20-25 minutes, until most of the liquid has evaporated. Season to taste with salt and pepper.
4.
Bring a large pan of lightly salted water to the boil and cook the pasta according to the instructions on the packet, until tender.
5.
Drain the pasta well and divide between 4 warmed serving dishes and top with the sauce.
6.
Sprinkle with the cheese and garnish with thyme.
