Pear and Blue Cheese Strudel
This strudel is a good source of blue cheese and fiber from the pears.
Serve this strudel with a simpole side salad.
Preheat the oven to 400°F, and line a baking tray with grease-proof paper.
Roll the puff pastry out on a floured surface to a size of approx. 12" x 4". Spread the blue cheese mixture on top, leaving around 1.5" free at the edges. Arrange the pears on one (lengthways) half of the pastry, fold over the top half, and press the edges together well. If desired, draw a pattern on the strudel with a fork.
