Blue Cheese and Pear Skewers
Peel the mango, remove the seed, and cut into strips. Cut the strips into 12 bite-sized rectangles. Remove the rind from the Gorgonzola and cut into 12 rectangles as well.
Wash the pears, cut in half, remove the seeds, and divide each half into 3 slices. Brush the cut surfaces with lemon juice. Skewer the mango, followed by the Gorgonzola, and finally the pear. Serve, garnished with mint.
