Ingredients
- For the dough
- 150 grams Quark
- 100 milliliters milk
- 100 milliliters Cooking oil
- 80 grams sugar
- 1 packet Vanilla sugar
- 4 drops Cooking oil (lemon)
- 300 grams Pastry flour
- 1 packet Baking powder
- For the peaches
- 2 cans Peaches
- 1 egg yolk
- 1 Tbsp condensed milk
- 4 Tbsps Apricot jam
- Chocolate glaze
Preparation steps
For the dough: Combine quark with milk, oil, sugar, vanilla sugar and lemon cooking oil. Mix flour with baking powder and sift together. Stir in half of dry ingredients into quark mixture, then knead in remaining dry ingredients. Roll out dough on a floured surface about ½ cm (approximately 3/16 inch) thick. Using a template, cut out fish shape and place on a baking sheet lined with parchment paper.
For the peaches: Drain peaches well in a sieve. Place a peach half in the middle of each fish.
Whisk egg yolks with condensed milk and brush over the dough. Bake in preheated oven at 180°C (gas mark 2-3, fan: 160°C) (approximately 350°F) for about 20 minutes. Cool on a wire rack. Pour apricot jam through a sieve and warm slightly then brush over the peach fish. Melt chocolate glaze according to instructions. Cover fish with the glaze and decorate with sugar pearls and serve.
