2 Tbsps white balsamic vinegar
½ lemon (juiced)
1 tsp honey
5 Tbsps olive oil

Preparation steps

1.

Rinse the arugula, spin dry, and tear into small pieces if necessary. Rinse and dry the peaches. Halve, remove the stone, and cut into slices. Drain the mozzarella and tear into pieces. Mix all the salad ingredients together, then divide onto 4 salad plates.

For the dressing, mix the vinegar with the lemon juice, honey, and oil. Season to taste with salt and pepper, drizzle over the salad, and serve.
