Ingredients

For the pasta
200 grams Pastry flour
2 eggs
2 Tbsps olive oil
salt
For the mushroom sauce
400 grams mixed Mushrooms
2 scallions
1 Tbsp butter
50 milliliters fresh Espresso
100 grams Whipped cream
1 Tbsp balsamic vinegar
salt
freshly ground peppers

Preparation steps

For the pasta, mix flour, eggs, olive oil and a little salt into a dough and knead until smooth. Roll with the pasta machine (or a rolling pin) into thin sheets. Cut into about 10 cm (approximately 4 inch) squares.

For the mushroom sauce, clean mushrooms. Rinse scallions, trim and cut the white parts into about 10 cm (approximately 4 inch) long strips. Slice the green parts into rings.

Bring a large pot of water to a boil. Melt the butter in a pan, add white scallion strips and the mushrooms and sauté about 5 minutes. Pour in the espresso, add cream and cook until slightly reduced, another 5 minutes. Season with balsamic vinegar, salt and pepper. Season boiling water with salt, add the pasta and cook 2-3 minutes. Drain well. Garnish pasta with mushroom sauce and serve sprinkled with the green scallion rings.
