500 grams Pasta (Drelli)
1 handful mint
150 grams air-dried ham
3 Tbsps olive oil
salt
freshly ground peppers
grated Parmesan (for serving)

Preparation steps

1.

Cook pasta in plenty of salted boiling water until al dente, according to package directions. Meanwhile, rinse mint, shake dry and strip leaves from stems.

2.

Fry ham in a dry pan until crispy on both sides. Drain on paper towels.

3.

Heat olive oil in the same pan. Drain pasta and add to pan, along with mint. Toss to combine and season with salt and pepper. Divide pasta among plates, top with ham and serve sprinkled with Parmesan.
