4 Tbsps Whipped cream

2 Tbsps butter
30 grams grated pecorino romano

Preparation steps

Rinse snow peas, cut off the ends and remove any threads. Blanch snow peas with the fresh peas in boiling salted water for 4-5 minutes. Then rinse in cold water and drain. Cut the snow peas lengthwise. Cut the ham into strips.

Whisk eggs with cream, salt and pepper. Melt some of the butter in a pan and pour in about 1/4 of the egg mixure. Cook over low heat until thickened, 2-3 minutes. Sprinkle 1/4 of the ham and the vegetables on one half of the omelet and fold. In this manner, make a total of 4 omelets. Serve omelets sprinkled with pecorino and mint.
