- 250 grams short tubular pasta
- 4 red onions
- 4 Tbsps olive oil
- ½ tsp sugar
- 150 grams sun-dried Tomatoes (packed in oil; drained)
- 2 Tbsps Caper
- 200 grams Feta
- ½ tsp salt
- ½ tsp honey
- 2 Tbsps lemon juice
- 1 Tbsp White vinegar
- 1 generous pinch Mustard
- parsley (for garnish)
Preparation steps
1.
Cook pasta in plenty of salted boiling water until al dente, according to package directions. Drain, rinse and let cool.

Peel onions and cut into strips. Fry onions in 2 tablespoons olive oil. Sprinkle with sugar and continue to cook until caramelized. Let cool.
3.
Drain tomatoes and cut into pieces. Drain capers. Cut feta into 1 cm (approximately 1/2 inch) cubes. In a bowl, combine pasta, onions, capers, feta and sun-dried tomatoes.
4.
Make dressing: Whisk together salt to taste with honey, lemon juice, vinegar, mustard and remaining oil. Pour dressing on salad and toss to combine. Serve pasta garnished with parsley.
