14 ozs Spaghetti
3 Tbsps olive oil
2 Zucchini (diced)
2 cloves garlic cloves (finely chopped)
1 tsp sugar
1 unwaxed lemon (zest and juice)
1 handful parsley (leaves roughly chopped)
½ cup grated Cheese (e. g. Pecorino)

Preparation steps

1.
Cook the spaghetti in boiling salted water until al dente.

Heat the oil in a frying pan and fry the courgette and garlic for 1-2 minutes. Sprinkle over the sugar and allow to caramelise slightly. Deglaze with the lemon juice and a little of the pasta cooking water. Season with salt and ground black pepper and braise for a short while until cooked through.
3.
Drain the noodles and toss with the lemon zest, the parsley and the courgette sauce. Divide between bowls and serve scattered with coarsely grated cheese.
