- 2 Chicken breasts (cut into chunks)
- 1 Eggplant (cut into small chunks)
- 2 Zucchini (cut into small chunks)
- 4 Tomatoes (cored and cut into wedges)
- 1 Tbsp thyme

- 11 ozs Tagliatelle

Oozing Tagliatelle with Chicken
Add cubes of mozzarella to the roasting tin when tossing the pasta in it.
Preparation steps
1.
Preheat the oven to 200°C (180° fan) | 400F | gas 6
2.
Tip the chicken, aubergine, courgette and tomatoes into a roasting tin, drizzle with oil, thyme and season. Roast for 20 minutes until cooked and tender.
3.
Meanwhile cook the pasta in boiling salted water according to packet instructions. Drain, reserving a cupful of cooking water.
4.
Toss the pasta in the roasting tin with the cooked chicken and vegetables and cooking water and serve.
