300 grams small Pasta (such as ditali, small tubes)
Bell pepper (1 yellow, 1 red)
1 Cucumber
2 Tbsps scallions
1 shallot
5 Tbsps White vinegar
½ tsp Mustard
salt
freshly ground peppers
½ tsp sugar
5 Tbsps Safflower oil

Preparation steps

1.

Cook the pasta in plenty of boiling salt water until al dente, drain, rinse in cold water and drain well.

Rinse the peppers, halve, remove the seeds and ribs and cut into very small cubes. Rinse the cucumber, cut off the ends, peel, halve lengthwise, scrape out the seeds and cut into very small cubes.

Peel and finely chop the shallot.

4.

Mix the vinegar, mustard and season with salt, pepper and sugar. Slowly whisk in the oil. Add the shallot. Add the pasta, vegetables and infuse in the marinade. Cover for 30 minutes in the refrigerator. Serve cold.
