2 scallions

300 grams Salmon (without skin)
2 Tbsps lemon juice
300 grams Crème fraiche
50 grams Whipped cream
freshly ground peppers
2 Tbsps freshly chopped parsley

Preparation steps

1.

Rinse scallions, trim and cut long, thin strips.

Cook pasta in plenty of boiling salted water until al dente. Blanch scallions in boiling salted water for about 3 minutes. Drain.

Cut the salmon into serving pieces and sprinkle with 1 tablespoon lemon juice. Heat creme fraiche with heavy cream and season with salt, pepper and lemon juice. Add salmon and simmer about 5 minutes.

4.

Drain the pasta and arrange with the salmon, sauce and scallions on warmed plates. Garnish with parsley and serve.
