6 Tbsps olive oil
3 Tbsps Orange juice
3 Tbsps White vinegar
2 garlic cloves
2 Anchovy fillet
75 grams mild, pickled Pepperoncini (from a jar)
freshly ground peppers
1 generous pinch Cumin
200 grams Feta
1 red Bell pepper
50 grams black, pitted Olives
50 grams green, pitted Olives
1 bunch parsley

Preparation steps

Bring pan with plenty of water to a boil. Add salt to taste.

Add penne into boiling salted water and cook until al dente.

Combine oil, orange juice and vinegar in a small bowl.

Peel garlic and squeeze through the garlic press. Add ro marinade.

Chop anchovy fillets and 1 pepperoncini and add to marinade.

Season marinade with salt, pepper and cumin.

Cut feta cheese into cubes.

Rinse peppers,  halve and remove seeds and ribs, cut into small cubes.

 Drain pasta.

Combine hot pasta with marinade in a large bowl.

Add feta cheese, pepper and drained olives, mix well.

Cut parsley leaves into strips and add to pasta. Season with salt and pepper and serve lukewarm.
