400 grams Spiral pasta
1 bunch scallions
200 grams Cherry tomatoes
1 bunch Boy carrots
200 grams Bologna (or cooked ham sliced)
1 bunch flat-leaf parsley
30 grams butter
1 tsp sugar
salt
For the sauce
150 grams Sour cream
½ tsp medium hot Mustard
2 Tbsps Ketchup
2 Tbsps lemon juice
2 Tbsps olive oil
Chili powder
2 Tbsps fresh squeezed Orange juice
salt
freshly ground peppers

Preparation steps

1.

Cook the pasta according to package directions. Drain, rinse in a colander and drain well.

2.

Rinse, peel and slice the carrots on the diagonal. Place the carrots in a skillet with a little water, the sugar and butter and season with salt. Saute about 5 minutes until al dente and let cool.

Rinse and thinly slice the scallions.

Rinse the cherry tomatoes and cut in half. Cut the ham into thin strips.

Rinse the parsley, pat dry, remove the coarse stems and chop the leaves.

For the sauce: In a bowl, whisk together the sour cream and mustard. Season with salt, pepper and lemon juice. Whisk in the oil ketchup, chile powder and orange juice until smooth.

7.

In a bowl, gently toss all the salad ingredients together and pour the sauce over. Toss to combine and serve.
