- 1 ½ cups fresh Parmesan (grated)
- 3 cups water
- 1 cup yellow Cornmeal
- 1 cup cold water
- ½ tsp salt
- 4 Tbsps unsalted butter

Preparation steps

In a medium bowl, grate Parmesan cheese and set aside.

For polenta, in a medium saucepan over medium-high heat bring the 2 3/4 cups water to a boil. Meanwhile, in a bowl stir together cornmeal, plus 1 cup cold water, and salt. Gradually add cornmeal mixture to boiling water, stirring constantly. Cook and stir until mixture returns to a boil. Reduce heat to very low. Cook for 10 to 15 minutes or until mixture is very thick, stirring frequently.
3.
Fold in Parmesan cheese and butter. Serve hot.
