2 Tbsps butter (for raclette pans)
8 cups fresh Spinach
2 cloves garlic cloves (peeled and finely chopped)
1 ¾ cups Gorgonzola (crumbled)
salt (to taste)
16 slices prepared Polenta
freshly ground peppers (to taste)

Preparation steps

1.
Coat the raclette pans with butter. Preheat the raclette grill.
2.
Clean and pick over the spinach. Cook for several minutes in a pan of boiling water. Drain thoroughly and squeeze out any excess water. Coarsely chop the spinach.
3.
In a medium bowl, combine the spinach, garlic and 1/2 of the Gorgonzola.
4.
Cut the polenta slices into diamond shapes, if desired. Spread the spinach mixture on the sliced polenta and place in the raclette pans. Sprinkle tops with remaining Gorgonzola cheese and place under the preheated raclette grill. Cook until golden brown and bubbly or about 7 minutes. Serve
