- 2 Tbsps good-quality olive oil (divided)
- 1 onion (peeled and chopped)
- ½ cup all-purpose flour
- 1 tsp paprika
- 1 pinch cayenne pepper
- 2 cups canned Tomatoes
- 3 ½ cups turkey stock
- ½ cup tomato puree
- salt (to taste)
- freshly ground Black pepper (to taste)
- 16 ozs ground Turkey
- 3 cups potatoes (peeled and roughly cut)
- ½ cup Sour cream
- ¼ cup fresh parsley (finely chopped)
- 4 sprigs fresh parsley (to garnish)
- ¼ cup grated Cheese (to sprinkle)

Preparation steps

Heat the oil in a large heavy-bottomed skillet; cook the onion until softened and translucent. Stir in the flour, paprika and cayenne pepper.

Stir in the chopped tomatoes and stock. Add the tomato purée and season to taste with salt and pepper. Bring to a boil, reduce the heat and simmer for 30 minutes. Add the ground turkey and continue cooking for 10 minutes or until the turkey is cooked through.

Meanwhile, bring a pot of salted water to a boil. Add the potatoes and simmer for about 15 to 20 minutes or until fork tender. Drain well and divide among serving bowls and top with the goulash. Garnish with sour cream and parsley. Sprinkle with grated cheese and serve hot.
