1 gram brown sugar (30 grams)
2 Tbsps honey
200 milliliters Orange juice

Preparation steps

Peel papaya, cut in half, remove seeds and cut into wedges.

Rinse the lemon in hot water, pat dry and grate the zest of half the lemon. Combine mascarpone, quark, lemon zest, and powdered sugar. Whip the cream until stiff and fold into the mascarpone mixture. 

3.

In a small saucepan over medium heat, caramelize the brown sugar and honey. Deglaze with orange juice and stir until smooth. Let the honey mixture simmer for about 5 minutes over low heat.

Serve papaya slices with mascarpone cream and honey sauce.
