- 2 eggs
- 5 ozs milk (whole)
- ¾ oz honey (2 TBSP.)
- 9 ozs Whole Grain Spelt Flour
- ½ tsp Baking powder
- 1 Orange
- 1 Blood orange
- 5 ozs small pomegranates
- 2 Tbsps Canola oil
- 7 ozs Greek yogurt
- 1 pinch cinnamon
Preparation steps
Beat eggs with milk and 1 tablespoon honey. Add flour and baking powder and knead into a smooth dough.
Peel and slice the oranges. Halve the pomegranate and remove the seeds from the fruit.
Bake a total of 8-12 small pancakes one after the other. Heat 1 teaspoon of oil in a frying pan. Pour in 4 piles of batter and bake over medium heat for about 3-4 minutes per side until golden brown. Use up the rest of the batter in the same way.
Meanwhile, stir yogurt with remaining honey and 1 pinch of cinnamon until smooth. Serve the yogurt with the orange slices and pomegranate seeds on the pancakes.
