200 milliliters milk
150 grams Pastry flour
2 Tbsps honey
2 eggs
For the filling
3 Banana
3 Kiwi
2 Tbsps Orange juice
1 untreated Orange (zest)
1 Tbsp lemon juice
2 Tbsps chopped Hazelnuts

Preparation steps

For the pancakes, mix milk in a bowl with 75 ml (approximately 2 ounces) of mineral water and flour. Add honey and let rest 30 minutes. Separate eggs, stir egg yolk into the batter, beat egg whites until very stiff and carefully fold into the batter. For the filling, peel banana and cut into slices. Peel kiwi, quarter and cut into slices.

In a bowl, mix banana, kiwi, lemon juice, orange juice and hazelnuts. Heat butter in a pan and bake four thin pancakes. Spoon a little filling in the middle of each pancake and fold up all edges into center to make a bundle. If necessary tie bundle loosely with kitchen twine. To serve, place bundle on plates and garnish with orange zest.
