Preparation steps

Blanch apricots, peel, cut in half and remove seeds.

Preheat oven to 100°C (approximately 200°F).

Rinse duck breasts, pat dry, season with salt and pepper and cook until golden brown without adding fat on the skin side in a hot pan. Remove, place a duck breast with skin side down on a baking sheet, top with apricots and put second duck breast with the skin side up on top. Secure by tying kitchen string around breasts. Cook in oven for 35-40 minutes. Warm jam and occasionally brush duck breast with it.

Slightly brown nuts and pistachios in a dry frying pan, remove, let cool and chop coarsely. Remove duck breast from oven, get rid of kitchen string and serve sprinkled with chopped nuts.
