1 duck leg
2 Tbsps vegetable oil
8 sheets Rice paper
8 Lettuce (e. g. cos lettuce)
1 Avocado (peeled and cut into thin strips)
1 large Red onion (finely sliced)
8 Tbsps Peanuts (roughly chopped or cashew nuts)
sweet Chili sauce (ready made)

Preparation steps

1.
Heat the oven to its lowest setting and season the meat with salt and ground black pepper.
2.
Heat the oil in a pan and fry the meat on all sides on a high heat.
3.
Wrap the meat in aluminium foil and roast for 20 minutes. Leave to cool completely and then cut into long thin strips.
4.
Whilst the duck is in the oven soften the rice paper between two damp cloths.
5.
Place a lettuce leaf in the middle of a sheet of rice paper and place some meat, avocado and onion strips on top. Sprinkle with the nuts and fold up the bottom of the rice paper sheet. Then roll it up. Do this with all the rice paper sheets.
6.
Cut the rolls in half and serve with chilli sauce.
