Preparation steps
1.
Heat the oven to 180C (160C in a fan oven), 350F, gas 4. Cut 4 x 20cm squares of foil and put into a large heatproof dish.
2.
Put 1 tsp of sugar in the center of each piece of foil with 1 tsp of butter.
3.
Slice the bananas and scatter on top of the butte and sugar mixture.
4.
Use a serrated knife to cut away the orange peel and pith. Cut the orange segments away from the orange membrane, catching the juice.
5.
Sprinkle the orange segments over the bananas with the coconut.
6.
Gather up the foil edges and pour over any reserved orange juice. Seal each parcel and bake for 15 minutes, to warm through.
