Ingredients

For the toasted sandwich
8 slices sandwich white bread
4 Tbsps Apricot chutney
1 cup Gorgonzola (cubed)
2 Pear (peeled, cored and sliced finely lengthways)
For the salad garnish
½ cup Arugula
1 Tbsp Hazelnuts
1 Tbsp Golden raisins
1 Tbsp extra-virgin olive oil

Preparation steps

1.
Pre-heat the grill to hot.
2.
Toast the slices of bread for 2-3 minutes on both sides until deep golden in colour all over.
3.
Remove and spread half of the slices evenly with apple chutney. Top with the cubed Gorgonzola and slices of pear, then return to the grill to melt the cheese.
4.
Remove once the cheese has just melted and arrange on serving plates.
5.
Quickly re-heat the other pieces of toast and sit on top of the pear to complete the sandwiches.
6.
Place small handfuls of rocket and a few hazelnuts and sultanas alongside the sandwich as a simple salad. Dress with the olive oil. Serve immediately.
