½ bunch rosemary
500 grams onions
2 garlic cloves
2 Tbsps olive oil
800 milliliters Vegetable broth
½ organic lemon
2 Tbsps black Olives (pitted)
1 Tbsp Mascarpone (or crème fraîche)
salt
freshly ground pepper
1 tsp Curry

Preparation steps

1.

Rinse the rosemary, shake dry. pluck the needles and chop. Peel and finely chop the onions and garlic.

Saute the onions in hot oil over medium heat for about 10 minutes, stirring constantly. Add the garlic and rosemary. Saute briefly. Sprinkle with curry and pour in the broth. Stir thoroughly. Cover and simmer for about 10 minutes.

3.

Rinse the lemon in hot water, wipe dry, finely grate the peel and squeeze the juice. Chop the olives. Stir the lemon zest, olives and mascarpone into the soup. Season with salt, pepper and lemon juice. Serve immediately.
