- 2 onions (chopped)
- 18 ozs carrots (chopped)
- 2 red Bell pepper (chopped)
- 2 smoked, thinly sliced Bacon (diced)
- 1 bay leaf
- 1 Tbsp chopped thyme
- 1 ⅓ cups Beef stock
- 1 ⅔ cups Red wine
- 1 sprig thyme

1 Pot, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 Peeler, 1 Kitchen shears, 1 Oven rack
Preparation steps
1.
Heat the oven to 150°C (130° fan) 300°F gas 2.

Mix x together the flour, salt and pepper and toss the meat until coated.
3.
Heat the oil in a flameproof casserole dish and brown the meat on all sides. Remove from the dish and set aside.
4.
Add the onions, carrots, peppers and bacon to the dish and cook until just brown. Remove from the heat and add the bay leaf and chopped thyme with the meat.
5.
Pour in the stock and wine and cook for 2 1/2-3 hours until the meat is tender. Garnish with the thyme sprig.
