- 1 tsp Baking powder
- ½ tsp salt
- ¾ cup fine Oatmeal (plus extra for sprinkling)
- ¼ cup butter
- 6 Tbsps water
- To serve
- Stilton cheese

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease 2 baking trays.
2.
Sift the flour, baking powder and salt into a mixing bowl, then stir in the oatmeal.
3.
Rub in the butter until the mixture resembles breadcrumbs. Add 6 tablespoons of water and mix to a soft dough. If it is too stiff, add a little more water, then knead until smooth.
4.
Roll out the dough on a surface sprinkled with oatmeal, about 5mm|1/4" thick.

Cut out rounds with a 5cm|2" round cookie cutter. Place on the baking trays.
6.
Bake for about 15 minutes, until just golden. Place on a wire rack to cool completely. Serve with Stilton cheese.
