- For balsamic fig sauce
- 1 cup aged balsamic vinegar
- ⅓ cup fig preserve
- ⅓ cup Port wine
- ½ tsp kosher salt
- ½ tsp freshly ground peppers
- 1 Tbsp Cognac (optional)
- 6 large slices whole grain bread (toasted)
- 6 ripe Figs
- 1 cup Stilton cheese (at room temperature)

For balsamic fig sauce:

Bring first 5 ingredients to a boil in a saucepan over medium-high heat; reduce heat to medium, and simmer 6 to 7 minutes or until mixture is reduced by half. Remove from heat; stir in cognac, if desired. Serve warm.

Top crostini with crumbled Stilton cheese. Cut ripe figs in half, lengthwise. Place figs on top of cheese. Drizzle with warm balsamic fig sauce. Serve.
