150 grams cold butter
70 grams honey
1 pinch salt
1 generous pinch Mace
3 Tbsps lemon juice

300 milliliters Apple juice
75 grams golden raisin
100 grams Apricot (dried and coarsely chopped)
100 grams Plum (dried and coarsely chopped)
75 grams Figs (dried and coarsely chopped)
150 grams ground Hazelnuts
80 grams honey
2 Tbsps lemon juice
½ tsp grated Lemon peel
1 pinch salt
1 tsp cinnamon
½ tsp Cardamom
1 generous pinch ground cloves
1 egg yolk
1 Tbsp milk
powdered sugar (for dusting)

Preparation steps

1.

For the filling: Heat apple juice, raisins, apricots, plums and figs. Remove from heat and let rest for 2 hours.

For the dough: Combine flour, butter, honey, salt, nutmeg and lemon juice. Knead into a stiff dough. Add 1-2 tablespoons of water if needed. Roll out 2/3 of the on a well-floured work surface. Press into a springform pan and line the edges. Roll out remaining dough and cut out stars or arbitrary shapes, as desired.

Preheat the oven to 180°C (approximately 350°F).

Cover dough in pan with parchment paper, add beans and blind bake for about 10 minutes, until golden brown.

Add nuts, honey, lemon juice and zest, salt, cinnamon, cardamom and cloves to soaked fruits.

Remove pan from oven and remove and discard paper and beans Pour filling into crust and top with dough decorations. Brush decorations with egg yolk and milk whisked together. Bake on the middle rack for about 50 minutes.

7.

Remove from oven, let cool slightly, release from pan and serve sprinkled with powdered sugar.
