Ingredients

For jars

6 ½ cupsApricot peeled, pitted and diced
½organic lemons juiced
4 ½ cupspreserving sugar 1:1
2 ½ cupsAlmond flour

Directions

1 Mix together the apricots, lemon juice and sugar in a pot and boil for 5 min. Add the almonds and pour the jam into sterilised jars.
2 Close tightly, rest upside down for 10 min then turn the right way up and leave to cool.
