250 grams Wheat noodle
250 grams Beef fillet
2 Tbsps Rice wine
1 tsp cornstarch
1 bunch scallions
1 Red Bell pepper
125 milliliters Chicken broth
50 grams soybean sprout
4 Tbsps vegetable oil
1 Tbsp hot Bean paste (Asian)
½ tsp ground cilantro
2 Tbsps soy sauce
salt

Preparation steps

Cook noodles in plenty of salted water for about 2-3 minutes. Drain well. Rinse beef, pat dry and cut into thin slices. Mix with 1 tablespoon rice wine and cornstarch and marinate for 10 minutes.

Rinse scallions, shake dry and cut diagonally into pieces. Cut bell pepper in half, remove seeds, rinse and cut into cubes. Heat half the oil in a large skillet. Sauté beef briefly over high heat, remove from skillet and season with salt and a little soy sauce. Add all vegetables (except for the sprouts) to the skillet and cook briefly. Pour in chicken broth and cook until vegetables are al dente.

Heat remaining oil in a pan and fry noodles in the oil. Toss remaining soy sauce, bean paste, coriander and sprouts with the noodles. Add vegetables and beef and cook, until warmed through, stirring constantly. Serve immediately.
