300 grams very fresh Beef fillet
1 pc ginger (10 grams)
½ bunch cilantro
3 Tbsps soy sauce
1 stalk Leeks
1 pc Celery root (125 grams)
1 carrot
1 red chili pepper
1 Tbsp sesame oil
1 ⅕ liters Vegetable broth
salt

100 grams Glass noodles

Preparation steps

1.

Cut beef in half lengthwise and cut crosswise into thin slices.

Peel ginger and grate. Rinse cilantro, shake dry and chop leaves. Mix ginger, cilantro and soy sauce in a bowl, add meat and let marinate for 20 minutes.

Meanwhile, rinse leeks and trim. Peel celery and carrot. Cut leek into thin rings. Cut carrots and celery into fine strips. Rinse chile pepper, clean and cut into strips.

Heat oil in a pot. Braise leek over medium heat for about 3-4 minutes until translucent. Add broth to the pot, add remaining vegetables, cook for about 5 minutes and season with salt and pepper.

5.

Meanwhile, cook noodles according to package directions and drain.

6.

To serve arrange noodles and meat in 4 soup bowls. Fill each soup bowl with boiling hot soup and serve immediately.
