150 milliliters dry white wine
Sea salt

Preparation steps

Rinse the mussels thoroughly and remove their beards. Remove the opened mussels. Rinse the chile pepper and chop. Peel the garlic and the onion and finely chop, then sauté in a large pot in hot oil until glassy. Deglaze with the white wine and add the salt, pepper, chile and herbs. Add the mussels, cover and steam for about 6 minutes until the shells are open. Discard the closed shells.

Divide the mussels, with the broth, on plates, garnish with parsley and serve with fresh white bread.
