- 2 Tbsps olive oil
- 1 clove garlic cloves (minced)
- ⅔ cup red Split lentil (rinsed)
- 5 cups vegetable stock
- 1 cup tomato passata
- ½ tsp dried thyme

Preparation steps
1.
Whisk together the oil and garlic in a small bowl and then divide between four microwaveable mugs.
2.
Add a quarter of the lentils, stock, passata, and a pinch of dried thyme to each mug. Add a little seasoning and stir well.
3.
Cover each mug with clingfilm and microwave for 10 - 12 minutes on a moderate setting until the lentils are tender.
4.
Carefully remove the mugs from the microwave and pierce the clingfilm to let the steam escape. Stir the contents of the mug well and check the lentils to see if they are tender. If not, microwave for a further 2 - 4 minutes until soft enough.
5.
Once ready, season each soup to taste and stir through some chopped, fresh thyme before serving.
