- 2 cups fine Egg noodle
- 4 cups chicken stock (hot)
- 1 yellow pepper (finely diced)
- 1 scallion (chopped)
- 3 cups peeled Prawn (deveined)
- shiitake mushrooms
- dark soy sauce (to taste)
- 1 Lime (juiced)
- freshly ground peppers
Preparation steps

Divide the egg noodles between four large microwaveable mugs. Divide the stock between the mugs and microwave on high for 2 minutes.

Carefully remove from the microwave and stir gently. Add the remaining ingredients and stir again.

Microwave on medium for 4 - 5 minutes until the prawns are pink and tender to the touch.

Season to taste with soy sauce, lime juice, and pepper before serving.
