2 cupsfine Egg noodle
4 cupschicken stock hot
1yellow peppers finely diced
1scallions chopped
3 cupspeeled Prawn deveined
shiitake mushrooms
dark soy sauce to taste
1Limes juiced
freshly ground peppers

Directions

1 Divide the egg noodles between four large microwaveable mugs. Divide the stock between the mugs and microwave on high for 2 minutes.
2 Carefully remove from the microwave and stir gently. Add the remaining ingredients and stir again.
3 Microwave on medium for 4 - 5 minutes until the prawns are pink and tender to the touch.
4 Season to taste with soy sauce, lime juice, and pepper before serving.
