2 Tbsps olive oil
2 Tbsps butter
1 medium Leek (trimmed and sliced)
1 medium carrot (peeled and finely diced)
1 clove garlic cloves (chopped)
1 cup dry white wine
3 Tbsps chopped parsley

Preparation steps

1.
Clean the mussels under cold running water, removing any beards or barnacles, and set aside. Discard any mussels that remain open when tapped against the side of the sink.
2.
Heat the oil and butter in a large saucepan and gently cook the leek and carrot until soft but not brown.
3.
Add the wine, let it bubble then add the mussels and put a lid on the pan. Cook for 3 - 4 minutes or until the mussels open.
4.
Stir in the parsley and serve immediately. Discard any mussels that do not open during cooking.
