3 Tbsps olive oil
2 cloves garlic cloves (finely chopped)
4 large shallots (finely sliced)
lemon juice (from 1 lemon)
4 Tbsps chopped parsley
Lemon wedge (to garnish)

Preparation steps

1.
Clean the mussels under cold running water, removing any beards or barnacles, and set aside. Discard any mussels that remain open when tapped against the side of the sink.
2.
Heat the oil in a large saucepan over a high heat and add the garlic and shallots.
3.
Cook for one minute then add the lemon juice and the mussels.
4.
Put a lid on the pan and cook for 3 - 4 minutes or until the mussels open. Mix in the parsley and serve immediately with lemon wedges to garnish. Discard any mussels that do not open during cooking.
