- For the mussels
- 2 ½ cups mussels (cleaned with beards removed)
- ⅜ cup dry white wine
- 1 clove garlic cloves (crushed)
- For the dressing
- 1 red pepper (seeded and finely diced)
- 1 green pepper (seeded and finely diced)
- 1 shallot (finely diced)
- ¼ cup sunflower oil
- 1 Tbsp white wine vinegar
- salt
- peppers
- For the garnish
- cherry Tomatoes (halved)
- Corn salad
Preparation steps
1.
Prepare the dressing by whisking together the white wine vinegar, sunflower oil and seasoning until combined.

Add the finely diced peppers and the shallot, stirring to combine. Cover and set to one side.

Heat a large saucepan over a moderate heat until hot, then add the wine and garlic clove.
4.
Add the mussels and cover with a lid. Cook for 3-4 minutes, shaking the pan every now and then.
5.
Remove from the heat, then uncover and discard any mussels that haven't opened.
6.
Arrange the open mussels in their shells on serving plates. Spoon the dressing on top of the mussels.
7.
Garnish the plates with the cherry tomato halves and some lamb's lettuce. Serve immediately.
