- 2 bunches Arugula
- 350 grams Strawberries
- 1 large red onion
- 4 tsps balsamic vinegar
- ½ tsp Mustard
- salt
- peppers (ground)
- 1 tsp Maple syrup
- 5 Tbsps olive oil
- 1 tsp butter
- 2 Monkfish medallions (each 150 grams)
- 2 tsps lemon juice

Preparation steps
1.
Rinse arugula, trim, spin dry, tear into bite-size pieces. Rinse, trim and slice the strawberries. Peel onion, quarter lengthwise and cut lengthwise into thin wedges.

Combine balsamic vinegar with mustard, salt, pepper and maple syrup and whisk in 4 tablespoons olive oil.

Drizzle monkfish with lemon juice and season with salt and pepper. Heat the remaining oil with the butter in a pan and cook the medallions on each side for 2-3 minutes.
4.
Distribute arugula on plate. Add strawberries and onion wedges and drizzle with salad dressing. Halve monkfish, place one half over the salad and serve immediately.
