- 6 ozs Pastry flour
- 1 egg
- 1 egg yolk
- 6 ozs cold water
- salt
- 22 ozs mixed Vegetables (cut into bite-sized pieces)
- vegetable oil (for cooking)
- lemon juice

Preparation steps
1.
Combine 3 1/2 ounces of flour with egg, egg yolk and water, season with salt and whisk into smooth batter, let swell slightly.
2.
Heat oil in a fryer to 180°C / 350°F (or in a saucepan, oil is hot enough when oil makes bubbles on a handle of a wooden spoon).
3.
Coat vegetables with remaining flour, dip into batter and cook in hot oil until golden. Drain on paper towels and drizzle with lemon juice. Serve.
