- 3 yellow Bell pepper
- 2 red peppers
- 4 Zucchini
- 12 ozs small, button Mushrooms
- fresh rosemary
- 3 Tbsps dried provencal herb blend
- olive oil (cold-pressed)
- salt
- freshly ground peppers

Preparation steps
1.
Wash, halve and deseed the peppers and cut into pieces. Peel and halve or quarter the onions, depending on size. Wash the zucchini and slice thickly. Clean the mushrooms and cut into smaller pieces.
2.
Thread the vegetables on to long skewers, brush with oil, season with salt and pepper and sprinkle with herbs. Place on a hot barbecue (or a lightly oiled indoor grill pan), and lay rosemary sprigs on and between the skewers and grill on all sides.
3.
Season again if necessary and serve immediately.
