- 250 grams mixed Lettuce (such as arugula, red and green oak leaf lettuce)
- 8 slices Bacon (cooked)
- 50 grams sun-dried Tomatoes (in oil)
- 1 Lime
- 1 tsp honey
- 4 Tbsps grapeseed oil
- salt
- 20 shrimp (peeled and deveined)
- cayenne pepper
Preparation steps

Rinse lettuce, spin dry, trim and tear into bite sized pieces. Arrange lettuce in a bowl with bacon slices. Drain tomatoes, reserve 2 tablespoons tomato oil and cut tomatoes into strips. Cut lime in half, cut 4 slices for garnish and squeeze juice from remaining lime.

Mix honey, tomato oil and 2 tablespoons grapeseed oil in a bowl and season with salt. Heat remaining oil in a pan and saute shrimp slowly for 1-2 minutes on each side and season with salt and cayenne pepper. Cover lettuce mixture with tomatoes and drizzle with the dressing. Serve with lime slices.
