- 350 grams Snow peas
- 400 grams green Peas
- Sea salt
- 2 sprigs mint
- ½ tsp peppercorns
- 2 Tbsps lemon juice
- 2 Tbsps white balsamic vinegar
- 1 pinch sugar
- 4 Tbsps olive oil
- 200 grams vegan Feta (Soy cheese, feta-type)

Preparation steps
1.
Rinse snow peas, trim and halve diagonally. Blanch with the green peas in boiling salted water for 1-2 minutes. Rinse in ice water and drain well.

Rinse the mint, shake dry and pluck off the leaves.
3.
For the dressing, grind pepper in a mortar coarsely and mix with lemon juice and vinegar. Season with salt and sugar and whisk in the oil. Combine prepared salad ingredients and mix well. Crumble cheese over the salad, season to taste and serve.
