- ½ head Lollo rossa
- ½ head Frisée
- 1 bunch Arugula
- Radicchio
- 1 Spinach (tender and fresh)
- 2 Tbsps White vinegar
- 5 Tbsps olive oil
- ½ tsp Mustard
- 1 pinch sugar
- salt
- freshly ground peppers

Preparation steps
1.
Rinse all salad greens, trim as needed, spin dry and cut or tear into bite-size pieces.
2.
For the vinaigrette, mix vinegar in a bowl with mustard, salt, pepper and sugar, then gradually whisk oil in and season to taste.
3.
Mix salad greens together in a large bowl and serve with the vinaigrette.
