- ⅔ cup sugar
- ¾ inch fresh ginger (peeled and sliced)
- 2 unwaxed Limes (juiced, zest grated)
- ⅛ cup Mint liqueur (colourless)
- 1 pomegranate (seeds removed)
- mineral water (still or sparkling as desired)

For a summer drink, try replacing the mineral water with vodka or sparkling wine.
Preparation steps
1.
Place the sugar, ginger and lime zest in a pot with 350 ml water, bring to the boil and cook for around 5 minutes. Remove from the heat, sieve into a bowl and leave to cool.

Stir in the lime juice and the liqueur and transfer to a metal container. Freeze for at least 4 hours, stirring well with a fork every 20 minutes for the first 3 hours.

Once the granita has a fine crystal texture, stir again and mix in the pomegranate seeds. Transfer to glasses, add a dash of mineral water and serve.
