2 Limes (peel and juice)
4 stalks mint
3 teaspoons gelatin (-Unflavored powder for cold dishes)
4 tablespoons honey
3 ½ ounces Whipped cream
1 ½ ounces Cashews

Preparation steps

1.

Mix the yogurt with 3/4 of the limes zest and the whole limes juice until smooth. Wash the mint, shake dry, set aside 1 stem for the garnish, chop the rest finely and mix into the yogurt.

Add the gelatin and honey and stir for 1 minute with a whisk. Whip the cream until stiff and fold into the yogurt. Pour cream into 4 glasses and chill for 2 hours.

Shortly before serving, roast the cashew nuts in a hot pan without fat for 3 minutes at medium heat. Sprinkle lime and mint cream with some lemon peel and the cashew nuts.
