½ cube Yeast 21 grams (approximately 1 ounce)
1 tsp sugar
450 grams Pastry flour
5 Tbsps olive oil
Sea salt

1 garlic clove
½ tsp dried oregano

250 grams Mozzarella

Preparation steps

For the dough, crumble the yeast in a bowl, stir in the sugar and 200 ml (approximately 1 cup) of lukewarm water until smooth. Add the flour, 4 tablespoons olive oil and 1 teaspoon salt, to taste, and knead into a smooth dough. Add flour as needed. Cover and let rise for about 1 hour in a warm place.

Preheat the oven to 200°C (approximately 400°F).

Divide the dough into 12 small portions and roll each out on a floured surface into thin pancake shapes. Place on baking sheets lined with parchment paper. Brush half of the pieces with olive oil.

Mix the tomatoes with the crushed clove of garlic and the oregano and season with salt and pepper. Spread on the remaining small pizzas and leave a narrow edge along the outside free. Clean the mushrooms and cut into slices. Drain the cheese well and dice finely. Sprinkle on the pizza with the mushrooms. Bake everything until golden brown, about 15-20 minutes, in the oven. The top pieces may take less time to cook.

Rinse the arugula, clean, spin dry and pick off smaller leaves, as needed. Remove the pizzas from the oven, and cover with the arugula. Cover each pizza with the top crust and serve.
