Preparation steps

1.

Blanch the tomatoes in hot water. Rinse with cold water, peel, quarter, core and coarsely chop the tomatoes. Thaw the beans. Peel, rinse and dice the carrots and celery. Rinse and drain the spinach. Rinse and slice the celery root.

Cube the bacon and fry in oil. Peel and finely chop the onions. Peel, rinse and finely dice the potatoes. Add the carrots, celery, celery root and bacon. Saute while stirring. Pour in 1 liter (approximately 4.5 cups) and simmer for 20 minutes.

Add the tomatoes, beans, spinach and pasta. Bring to a boil, cover and simmer over low heat for 15 minutes. Finely chop the parsley leaves. Stir and season with salt and pepper. Serve sprinkled with parmesan.
