- 150 grams Millet
- 500 milliliters Vegetable broth
- 1 onion
- 3 garlic cloves
- 300 grams Leeks
- 2 scallions
- 500 grams Tomatoes
- 3 Tbsps olive oil
- 100 grams green Olives (pitted)
- cayenne pepper
- salt
- freshly ground peppers
- Sprout (for garnish)
Preparation steps
1.
Combine millet with vegetable broth, season with salt and bring to a boil. Cover and simmer over low heat about 20 minutes.

Peel and chop onions and garlic.
3.
Rinse leeks and scallions. Cut the white and light green parts of both crosswise into rings.
4.
Blanch tomatoes for a few seconds in boiling water, then drain, peel, quarter, core and cut into cubes. Cut olives into slices.
5.
In a pot, cook onions and garlic in hot oil until translucent. Add leeks and tomatoes and cook about 5 minutes. Add olives and season with salt, pepper and cayenne pepper. To serve, divide millet among plates, top with vegetables and sprinkle with leeks, scallions and sprouts.
